Christmas turkey

Turkey
In Italy, turkey is eaten at Christmas, not in the end of November. Here is a good recipe, which can be served with roasted potatoes on the side.
Ingredients
* 1 turkey around 2 kilos
* 500 grams of salsiccia
* 3 apples
* 500 g of pitted prunes
* 500 grams of dried chestnuts
* 1/2 celery
* 1 carrot
* 1 cup dry white wine
* milk
* butter
* vergine olive oil
* salt
* pepper
Leave the chestnuts to soak for at least 2 hours, then drain them. Put them in a pot, cover with cold milk and cook for 40 minutes. Then prepare the filling: chop sausage, cut apples into cubes, halve the plums, mash chestnuts, chop celery and carrot. Mix together. Add salt and pepper.
Fill the turkey with this stuffing. Keep what’s left apart for later. Grease a baking pan, pour oil on the bottom and arrange the turkey. Place in hot oven at 180 ° C and cook for 3 hours. Check the cooking, occasionally bath the turkey with its sauce and sprinkle it with wine. Before taking it out of the oven, melt in a pan a little ‘butter, add the stuffing left aside, cover and cook for about twenty minutes. If the mixture is too dry, moisten with a little ‘white wine. Serve this stuffing as a side dish.
