Lentils and zampone
Lentils are the most important part of an italian New Years dinner. Eating lentils will bring you a prosperous coming year. And we all like that, don’t we? Usually served with a Zampone (pig’s feet) or a sausage. Or both.
Serving 4:
* 400 g lentils
* 1 celery
* 1 garlic clove
* extra virgin olive oil
* salt
Preparation
Chop garlic and celery in fine. Pour the lentils in a clay pot along with chopped vegetables and cover with water and let it rest overnight.
Pig’s Feet
Ingredients:
* 1 pig’s foot (zampone)
* 50 g ham
* Butter
* onion
* 1 tablespoon tomato sauce
* meat broth

Lentils and zampone
Soak the pig’s feet in water overnight. Take the pig’s feet, clean it and cook for three hours in fresh water. Take a pan, put a little butter and oil and cook the chopped onion just begins to brown. Pour the water of the lentils, and add them and the vegatables, cover with broth and cook for two hours. Add the tomato sauce, more broth if needed , a pinch of salt and pepper and finish cooking. Slice the zampone and cover with the lentils.
